Bush food afternoon tea

Lemon Myrtle Biscuits

 250g sugar
 
250g Butter
500g sifted SR flour
 
4 eggs
Ground Lemon Myrtle leaves (about 12) to taste (coffee grinder works well)

 Cream together sugar and butter add the eggs one at a time,
fold in flour and ground Lemon myrtle until combined,
roll into small balls. Add a bit more flour if it is too soft,
I refrigerate it until it is firm enough to roll.
Flatten slightly with a fork 

Bake in Moderate oven for 12 to 15 minutes. Cool and store in an  airtight container.

When  cool fill with lemon myrtle buttercream icing.
